salt and pepper to taste
2 cloves crushed garlic
2 Tbsp. chopped parsely
5-6 new potatoes
1/2 c. chicken stock |
Directions:
A super easy roast pork dish - put it in the oven and your work is done! New potatoes lend a touch of elegance.
Line the bottom of a dutch oven or roasting pan with new potatoes cut into wedges. Lay the pork on top of the potatoes. Season with salt and pepper to taste. (Use one of those marinaded tenderloins and you can skip this step. It hardly even feels like cooking!) Crush garlic and sprinkle on top, along with parsley. Pour chicken stock over the top.
Roast at 350°F for about 1 hour until potatoes and pork are tender.
