1/4 cup oil
Paprika
Salt
Pepper
Grated Parmesan cheese (optional)

Directions:
Adapted from the recipe from the good folks at Crisco Oil.
Yield: 4-6 servings
Preheat oven to 425°F.
Pour oil into a 13x9x2 inch baking pan.
Scrub potatoes. Cut lengthwise into quarters. Blot edges with paper towel.
Put potatoes in pan. Turn to coat evenly with oil, leaving potatoes cut side up in a single layer.
Sprinkle with paprika, salt, pepper (and cheese, if used).
Bake at 425°F for 30 to 40 min. or until potatoes are fork tender.
Serve as is or top with a dollop of sour cream. Season with extra salt and pepper, if desired. Enjoy! -Diana
