Balsamic Spinach Salad with Mandarin Oranges More Recipes Like This
10oz. bag spinach leaves
11oz. can mandarin oranges
1/2 c. extra virgin olive oil
3 Tbsp. aged balsamic vinegar
One 2.8-oz. can of French-Fried onions
Directions:
Yield: 6-8 servings
Note: If you don't have balsamic vinegar, you can substitute red wine vinegar in a pinch.
Rinse the spinach leaves and pat dry. Place them in a large, non-reactive salad bowl (think wooden). Drain the oranges, reserving juice. Place oranges in a separate bowl.
Whisk together oil, vinegar and 2 Tbsp. of the reserved orange juice. Pour this over the spinach and toss gently to coat. Garnish with french-fried onion rings. Enjoy! -Diana
