5oz. can chunk white chicken or turkey, drained
1 1/2 c. chunked mixed fruit (strawberries, peaches or nectarines)
1/3 c. vanilla-flavored yogurt
1 1/2 tsp. orange juice
Lettuce for plate
sliced canteloupe for garnish
A refreshing summery dish - great for a summer brunch.
In a bowl, combine chicken and fruit; arrange on lettuce-lined plate.
Mix yogurt and orange juice; drizzle over chicken mixture. Garnish with sliced cantaloupe. Makes about 1.5 cups or 2 servings. Enjoy! -Diana
