Ingredients: Metric Units
2 c. flour
1/2 tsp. baking soda
2 Tbsp. butter
1 egg
3/4 c. hot water
1 tsp. baking powder
1/2 tsp. salt
1 c. sugar
1/4 c. orange juice
grated rind of 1 orange

This recipe was given to me by my friend Kitty out in Spokane, WA. (Don't worry, no "high elevation" modifications needed!

Yield: 1 loaf

Preheat oven to 350F.

Sift together flour, powder, soda and salt. Beat butter and sugar until light and fluffy. Add egg and beat well. Combine orange juice, hot water and orange rind in a separate bowl. Add wet and dry ingredients a little at a time to butter mix, alternating beating after each.

Pour batter into greased 9x5x3 inch pan and bake at 350F oven for 50 - 60 min. Let rest in pan about 5 min., then turn out to cool completely on wire rack. Or at least until cool enough to devour. Enjoy! -Diana
