Ingredients: Metric Units
2 c. flour
1/2 tsp. baking soda
2 Tbsp. butter
1 egg
3/4 c. hot water
1 tsp. baking powder
1/2 tsp. salt
1 c. sugar
1/4 c. orange juice
grated rind of 1 orange

Directions:
This recipe was given to me by my friend Kitty out in Spokane, WA. (Don't worry, no "high elevation" modifications needed!

Yield: 1 loaf

Preheat oven to 350°F.

Sift together flour, powder, soda and salt. Beat butter and sugar until light and fluffy. Add egg and beat well. Combine orange juice, hot water and orange rind in a separate bowl. Add wet and dry ingredients a little at a time to butter mix, alternating beating after each.

Pour batter into greased 9x5x3 inch pan and bake at 350°F oven for 50 - 60 min. Let rest in pan about 5 min., then turn out to cool completely on wire rack. Or at least until cool enough to devour. Enjoy! -Diana
