2 lb. lean pork, cut into strips
1 green pepper, in strips
1/2 med. onion, sliced
1/4 c. brown sugar
2 Tbsp. cornstarch
2 c. pineapple chunks
1/4 c. cider vinegar
1/4 c. water
1 Tbsp. soy sauce
1/2 tsp. salt
Directions:
Step away from the wok - give the slow cooker a try. Serve over rice.
Yield: 4-6 servings
Place pork strips in crockpot. Add green pepper and onion.
In a medium bowl, mix brown sugar, cornstarch. Over a bowl, drain the pineapple chunks and save the juice. Add 1 c. of the pineapple juice to the brown sugar. Then add vinegar, water, soy sauce and salt. Blend until smooth.
Pour sauce over meat and vegetables.
Cover. Cook on
Low: 7-9 hours
One hour before serving, add pineapple chunks.
