Crockpot Cheesy Potato Casserole


Ingredients:
7 med. potatoes 1/4 c. butter, melted 1 small onion, chopped 1 tsp. salt 8oz. sour cream 1 10.75oz. can cream of chicken soup 2 c. shredded cheese 1 1/2 - 2 c. stuffing mix
Directions:
A big hit at the Studebaker Club Christmas Party. Peel potatoes and cut into 1/4 in. strips. Set aside. In a medium bowl, combine melted butter, onion, salt, pepper, sour cream, and cream of chicken soup. Spray the inside of the crock with nonstick spray. Place potatoes in prepared crock. Add 2 c. shredded cheese and stir to combine. Mix well with sour cream and onion mixture. Cover with stuffing mix. Cover. Cook on Low: 8-10 hours High: 5-6 hours
