Cinnamon Snack Cake More Recipes Like This

Ingredients: Metric Units
1 c. butter (2 sticks, 1/2 lb.)
1 c. sugar
1 tsp. vanilla
2 eggs
1 c. flour
1 c. cornstarch
1 tsp. cinnamon
1/2 tsp. baking powder
1/4 c. milk

Topping
2 Tbsp. butter
1/4 c. flour
1/4 c. sugar
2 Tbsp. oats
1/2 tsp. vanilla
1/2 tsp. cinnamon
Directions:
A quick little coffee cake rich with cinnamon with a crunchy streusel topping.

Preheat oven to 350F. Spray an 8x8 square baking pan with nonstick spray.

In a large bowl, cream butter and sugar until well blended. Add vanilla. Beat in eggs one at a time.

In a medium bowl, sift together flour, cornstarch, cinnamon, and baking powder. (Don't skip this step; the cornstarch has a tendency to clump.)

Add dry ingredients to butter-sugar mixture. Add milk. When the batter is smooth, spread it into the prepared 8x8 square baking pan.

In a small bowl, combine cold butter with flour, sugar, oats, vanilla and cinnamon. Work with your fingers until combined. Sprinkle on top of waiting batter.

Bake at 350F for 45 min. or until a toothpick inserted into the center comes out clean.
