Colonial Day Potato Soup

5 lb. potatoes 1/2 medium onion water 8 c. milk 1/2 - 1 c. instant mashed potato flakes for thickening |
Directions:
Colonial Day recipe.
Peel potatoes and cut into small cubes - bite-sized. Chop onion.
In a large stockpot, melt butter. Add onions and potatoes and sauté over low medium heat until onions are transparent.
Add enough water to cover potatoes. Increase heat to high or medium high and simmer until potatoes are fork-tender.
Add milk. Cook until heated through. Do not boil. Stir in potato flakes until a nice thick consistency is reached.
Transfer to crockpot.
