6 Tbsp. butter
1 1/2 c. powdered sugar
1 tsp. vanilla
hot water
Directions:
This icing seems like it won't come together, but have faith and keep stirring, and voila!
Enough to frost one batch of Butterscotch Cookies - if you have a light hand.
In a small skillet over medium heat, melt butter. Allow to heat until butter is slightly browned. Stir in confectioner's sugar. Remove from heat. Add vanilla.
Work the confectioner's sugar in - it may end up to be almost a dough. Add just enough hot water to get the icing to a spreadable consistency. (If it gets too liquid, add enough confectioner's sugar to get it back to a spreading consistency.)
Smear a little frosting on each cookie, just a couple teaspoons - not too much or you won't have enough for the whole batch.
