2 Tbsp. margarine (not butter!)
1/2 cup milk
1/2 cup all-purpose flour
3 eggs
Confectioner's sugar, jam or maple syrup
Directions:
Preheat oven to 375 degrees. Place margarine in a medium sized cast iron skillet. Heat over med. heat until margarine sizzles (but do not brown). Turn off heat. Measure the milk, flour and eggs into a mixing bowl and mix until well blended. Pour it into skillet and bake at 375 degrees for 13 minutes. REmove from oven, sprinkle with confectioner's sugar, jam, or maple syrup before serving. Serves 2. Enjoy! -Diana
