Streusel topping
1 c brown sugar
1 c flour
1/2 tsp salt
1/2 tsp cinnamon
1/2 c chilled butter
Muffins
1/2 c. butter, softened
1 3/4 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 c. sour cream
1 c. sugar
1 tsp. vanilla
2 eggs
Directions:
A delicious breakfast treat with a cup of coffee.
Yield: 12 muffins
Preheat oven to 350°F.
In a medium bowl, combine all streusel topping ingredients. Set aside.
In a large bowl, combine all muffin ingredients. Beat until just combined - don't overbeat.
Butter and flour 12 muffin tins. Fill halfway with batter, then top with a layer of streusel. Add batter on top of the streusel layer, then top with more streusel topping.
Bake at 350°F for 25 to 30 min.
