1 lg. bag pre-shredded coleslaw mix (with carrots) or shred your own:
1 sm. head cabbage and 1 carrot, shredded
1 small head of red cabbage, shredded
1 medium yellow onion
4 Tablespoons minced fresh parsley
2 tsp salt
1/4 tsp. pepper
1/2 cup light cream
1 2/3 cup mayo
4 Tablespoons apple cider vinegar
1 tsp. celery seed
Directions:
Crunchy and tart, this is excellent coleslaw. A great side with pork sandwiches or for a summer picnic. Make this coleslaw a day ahead for best results. Featured at the 2009 Uwchlan Hills Teacher Appreciation Luncheon ("UH-loha! Luau")
Mix together cabbage, carrot, and onion. Chill in refrigerator for 30 minutes. Mix remaining ingredients, then pour over cabbage mixture, using just enough dressing to wet slaw and blend ingredients.
