Rhubarb Chutney More Recipes Like This

Ingredients: Metric Units
2 pounds fresh rhubarb, chopped
2 cups chopped onion
1.5 cups brown sugar
1 cup cider vinegar
2 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. ground cloves
2 tsp. salt
Combine rhubarb, onion, brown sugar, vinegar, cinnamon, ginger, cloves and salt in a large heavy saucepan. Cook until thickened, stirring often (about 30 mins). Pack into hot sterlized jars and cover with canning lids. Invert 5 mins., then turn back upright for proper seal. Enjoy! -Diana
