2 tsp oil
1 onion, diced
4 eggs
2 tsp soy sauce
fresh ground black pepper
2 potatoes, scrubbed, diced, cooked
1/2 c green peas/beans, cooked
1/2 grated Cheddar cheese
2 tomatoes, sliced
1/2 c chopped parsley
Directions:
Heat oil in ovenproof frying pan, stir fry onion over medium for 1 min. cover, cook 2 min. Whisk eggs with soy sauce, pepper, add onoins. Return mixture to pan, when eggs begin to set, scatter potatoes & peas/beans over top. Cook, covered until eggs have set, sprinkle cheese on top. Place omelet under hot broiler until the cheese melts. Top with tomato slices, parsley
