Spicy Lemon Chive Butter
1/2 cup (1 stick) butter, softened
2 Tbsp. each: minced chives and minced parsley
2 tsp. fresh lemon juice
1/4 tsp. ground red pepper

Combine all ingredients in a small bowl, mixing until well blended. Refrigerate, covered, one hour to allow flavors to blend. Serve with corn on the cob or other favorite vegetables.
