2 c. flour
2 c. sugar
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
4 c. apples, diced
1/2 c. butter, melted
1/4 c. orange juice
2 eggs
Directions:
Delicious at coffee hour, a nice cake to bake on a snowy afternoon with crisp fall apples still in the crisper.
Yield: 1 bundt cake
Preheat oven to 325°F. Lightly grease a bundt pan.
Sift together into a large bowl: flour, sugar, baking soda, cinnamon, nutmeg, and salt.
Peel and dice 4 cups of apples.
Add melted butter, eggs, and orange juice to dry ingredients.
Stir in apples. Drop batter into bundt pan.
Bake at 325°F for 1 1/2 hrs. or until cake starts to pull away from the sides of the pan slightly. When done, the cake will spring back to touch.
Serve warm or cold with ice cream.
