Scalloped Potatoes with Ham

6 c. potatoes, sliced thinly
2 c. ham, chopped
1 medium onion, chopped
8 Tbsp. butter (chilled)
4 Tbsp. flour (approx.)
salt and pepper to taste
paprika if desired
2 1/2 c. milk
This is my mother-in-law's favorite "after Easter" dinner. A great way to use up leftover ham.
Preheat oven to 350°F.
Spray a large oven-safe casserole with nonstick spray.
Layer potatoes on the bottom of the casserole. On top of the potatoes, sprinkle some ham, a little onion, dots of butter. Dust flour over the top of this. Salt and pepper to taste.
Then make another layer of potatoes, followed by another layer of onion, ham, butter, and flour.
End with a potato layer. Pour milk into the dish. Dust with paprika if desired.
Bake at 350°F for 1 hour.
Serve with green beans or a salad for a good peasant dinner.
