Pt. Judith Fish Roll-Ups


Ingredients:
4 fish fillets 1 cup commercial bread stuffing 1 cup coarse cracker crumbs 4 Tbsp. chopped parsley 1/4 cup minced onions 1/4 cup diced celery 4 Tbsp. melted butter 4 squares heavy-duty foil string Boiling water 1/4 tsp. salt 1/8 tsp. pepper 1 Tbsp. lemon juice Sauce: 2 Tbsp. butter 1 cup milk dash black pepper 1.5 Tbsp. flour 1/4 cup grated cheese 1/2 tsp. lemon juice
Directions:
NOTE: Recipe from "Delicious Directions from Hebron" attributed to Diane T. Lally. -Combine stuffing, cracker crumbs, parsley, onions and salt & pepper (to taste). Add enough boiling water to moisten stuffing. Place each fillet on a square of foil. Put stuffing on center of each fillet and roll. Tie with string. -Brush the roll-ups with melted butter and sprinkle with lemon juice. Fold foil around fillet. Place foil packages in a shallow pan. Bake at 400 degrees for 30 to 40 minutes. Remove fish to serving dish and add white sauce. White Sauce: Combine all ingredients except lemon juice and cheese. Stir over low heat until thickened. Add lemon juice and cheese before serving.
