6 fillets of sole or flounder
1/2 cup chopped scallops
1/2 cup chopped shrimp (optional)
1/3 cup oil
1 Tbsp. chopped onion
1 Tbsp. parsley
Dash of salt and pepper
20 crushed Ritz crackers

-Saute' scallops and shrimp in oil for 2 mins. over med-high heat with onion, parsley and seasonings.
-Mix in crackers, spread on fillets, then sprinkle each with a teaspoon of grated cheese. Add a few drops of lemon juice.
-Roll up and secure with toothpicks. Dot fillets with margarine. Place on foil-lined cookie sheet. Cover loosely with foil. Bake at 350 degrees for 15 to 20 minutes. Serves 6. Enjoy!!! -Diana
