A delicious blend of fruits with a crunchy crumble topping, delightful with a scoop of vanilla ice cream.
Yield: 1 9-inch pie, 8 big fat slices or 12 "just a little" slices
Preheat oven to 425°F.
In a large bowl, slice peaches and apples. Toss together with cinnamon and sugar. Stir to coat all the fruit. If you like, sprinkle the fruit with a little lemon juice to inhibit browning of the edges.
Lay pie pastry for a one-crust pie in a pie plate. Crinkle the edges a little for a finished look.
Mound the fruit evenly in the pie crust.
In a small bowl, combine flour, sugar, oats. Cut the butter into small pieces and work the ingredients together to form the streusel topping.
Scatter the streusel crumb topping evenly over the fruit.
Bake in the middle of the oven at 425° F for 10 minutes. Reduce heat to 375°F and cook an additional 45 min.
Remove from oven and allow to cool completely on rack.
