Garden Extras Pepper Relish


Ingredients:
12 large peppers (green and red bell, mixed), ground (5.5 cups) 3 medium white onions, ground (1 cup or so) 3/4 cup granulated sugar 1 Tbsp. uniodized salt 1.5 Tbsp. mustard seed (that's SEED, not ground or prepared) 1 cup apple cider vinegar cheesecloth for draining
Directions:
A great relish to add a little zing to your hot dog. Yield: 6 half-pint jars Place peppers and onions in a large bowl. Pour boiling water over them to cover. Cover with a large lid and let stand for 20 mins. Drain well using a colander and two layers of cheesecloth. Dump the peppers and onions into a large, stainless stockpot. Add remaining ingredients and simmer for 12 to 15 mins. Seal at once in hot sterilized jars. Process in a boiling water bath for approx. 30 mins. Makes 6 half-pint jars (You could put it in pint jars if you're a real relish fiend. I do it in half pints - it's relish. Who wants to keep a whole pint of relish in the fridge once it's open?)
