Bacon Oven Pancake (Fläskpannkaka)

3 1/2 c. milk
1 3/4 c. flour
1/2 lb. bacon, snipped
An economical dinner when you need something new for "Breakfast for Dinner" night.
Yield: 4-6 servings
Spray the bottom of an 11x15 broiler pan with nonstick spray. Preheat oven to 425°F.
Snip bacon into bits and cover the bottom of the broiler pan.
In a medium bowl, beat eggs and half the milk. Add flour, beating until smooth. Add the other half of the milk and beat until smooth.
Pour batter over the bacon.
Bake in a 425°F oven about 30 min., until center is set. Let stand a couple minutes before cutting.
Serve with a dollop of lingonberry jam, and maybe a green salad on the side.
