Got leftover scalloped potatoes you just can't face - crisp them up and add a little egg for a hearty scramble.
Yield: 4 servings
Spray a large skillet with nonstick, or coat with a little oil. Heat over medium heat. Add scalloped potatoes (or scalloped potatoes with ham) to skillet. Heat over medium heat until a little crispy and warmed through.
In a medium bowl, beat eggs with a little milk. (Salt to taste if you like.) Pour eggs over potatoes. Cover and continue to heat until eggs are set, 3-5 min.
Serve with a side of toast and a drizzle of ketchup.
