Huachinango la Veracruzana


Ingredients:
1 lb red snapper or other white firm fish or shrimp 3 whole limes (juice) 6 oz water 1 Tbsp olive oil 1 whole onion, chopped 2 cloves garlic mashed 1 dash cumin 1 dash pepper 3 Tbsp capers, with juice 1/2 c Spanish olives w/juice, chopped 1 whole bay leaf 3 whole tomatoes, chopped some jalapeños or serranos, chopped lg 1 c dry white wine
Directions:
Marinate fish in lime juice+water and salt for 1/2 hr. Preheat oven to 350° Place fish in lightly oiled baking dish. Saute all ingred for sauce. Pour sauce over fish. Bake 1520 min or until fish opaque.
