Kari Kubis Udang (Malaysian Shrimp & Cabbage Curry) More Recipes Like This

Ingredients: Metric Units
12 oz Chinese/white cabbage
1 lb med. shrimp, in shells
6 shallots
1 clove garlic
2 Tbsp veg. or peanut oil
1/2 tsp turmeric
2 tsp grated fresh ginger
2 tsp finely chopped lemon grass
3/4 c thin coconut milk
3/4 c thick coconut milk
Rinse cabbage, chop coarsely. Peel shrimp. Peel, chop shallots, garlic. Sauté shallots, garlic 3 min. Add turmeric, ginger, lemon grass, sauté 3 min, stirring constantly. Add thin co. milk, 1/2 thick co. milk, boil. Add cabbage, shrimp, simmer 6 min. Add remaining thick co. milk, season with salt, serve. For garnish, add finely shredded red & green chili or quartered hard cooked egg.
