4 swordfish steaks, 8-10 oz ea.
1/2 c oliv eoil
6 cloves garlic, minced
2/3 c minced Italian parsley
5 Tbsp lemon juice
Rinse fish with cold water and pat dry. In small bowl whisk together olive oil, garlic, parsley, and lemon juice. Place steaks under broiler or on grill and brush generously with sauce. Cook until fish is opaque throughout, about 4 min/side. When turning fish, do so with care. The best method is to slip a long wide spatula underneath and then smoothly but quickly flip it over. Serve fish immediately and pass the remaining sauce separately.
