Seared Mahi-Mahi with Szechuan Shrimp More Recipes Like This

Ingredients: Metric Units
1 lb. lg shrimp, shelled, deveined
1/2 tsp. Chinese chili paste w/garlic
1/2 tsp. soy sauce
4 mahi mahi filets, 6 oz. ea, w/skin
salt & pepper to taste
2 Tbsp. peanut oil
1 tsp. sesame oil
1 1/2 green bell peppers, diced
3 scallions, diced
1 sm. onion, diced
White Butter Sauce
1 lb. snow peas, blanched
Mix shrimp, chili paste and soy sauce. Marinate 30 min. Season filets w/salt, ppr. Heat peanut oil in lg. skillet on hi. Cook skin side down until firm, turning once. Remove fr. pan. Add sesame oil to skillet, stir fry peppers, scallions, onion, shrimp. Ladle 1/4 c. White Butter Sauce on ea. plate. Arrange snow peas in sm. mound. Spoon shrimp over mount. Fish filet alongside.
