Boil milk and then add coconut. Let mixture stand overnight. Sieve milk. (should be 1/2 litre)
Whisk egg yolks, sugar, corn starch.
Pour hot milk onto the mixture while continuing to beat.
Continue to stir, heat mixture until it thickens, and then let it cool. When cool, add the vanilla extract and 2 Tbsp of grated coconut. Mix well, freeze in ice cream maker
