Marinade:
5 oz. soy sauce
2 Tbsp Worcestershire sauce
Juice 1 lemon
3 Tbsp brown sugar
1/2 c sugar
1 - 2 cloves garlic minced
1/2 c water
1/2 c. Kentucky bourbon (Jim Beam) or Tennessee whiskey (Jack Daniels)
1 2 lb London broil steak
pepper to taste
Directions:
Smokey sweet with the flavor of bourbon or whiskey. Delicious on the grill.
While purists would get into fisticuffs over the type of whiskey used here, honestly, it doesn't matter much to the steak. As I learned from the inimitable Julia Child, if you cook with wine, use wine worth sipping. The same goes for whiskey. Use what you would use to spike your egg nog.
Remember: Always discard your marinade after marinading - don't use it to baste the cooking meat. Any bacteria on the raw meat will end up in the marinade. Cooking the meat will kill the bacteria, so don't baste it with "extra."
Mix soy sauce, Worcestershire sauce, lemon, brown sugar, bourbon or whiskey, garlic, and water. Marinate steak overnight. Discard marinade. Broil or grill steak.
