4 oz bacon, diced
2 lbs chuck, diced
3 onions, finely chopped
6 cloves garlic, minced
6 fresh jalapeno peppers, seeded, stemmed & chopped
1/4 c chili powder blend
1 c whole tomatoes (28 oz.)
salt to taste
Directions:
Heat large heavy pot, add bacon, saute until translucent. Add meat and saute over medium heat, adding onions, garlic, and jalapenos. Stir in chili pdr, lower heat and continue to cook until onions are translucent. Meanwhile, squish tomatoes w/hands, add. Simmer 1 hr, add water if needed. Correct seasonings.
On Chili Powder: Make your own in a spice grinder: 10 seeded stemmed pasilla chilis, 2 seeded, stemmed ancho chilis, 3/4 tsp grd cumin, 1 Tbsp oregano, 1 tsp garlic pdr, 1 tsp salt.
