1 lb lean ground beef
1/2 lb lean ground veal *see note*
1/2 lb lean ground pork
1 medium onion, chopped very fine
1 clove garlic, minced
1 tsp. fresh tarragon
1/4 c. chopped fresh parsley
1 c. fresh bread crumbs
1/2 c. chili sauce
1 Tbsp heavy cream
salt & pepper
4 slices slab bacon
3/4 c sour cream, room temp
A he-man crowd pleaser.
Note: On meat - our grocery store sells packaged "meatloaf mix" that's beef, veal, and pork in equal parts. If veal isn't your thing, no big deal. You want to end up with 2 lb. of ground meat: mix and match what you have access to, what you fancy. 1 lb. beef plus 1 lb. turkey &ndash; 2 lb. beef &ndash; 2 lb. turkey &ndash; 1 lb. beef plus 1/2 lb. turkey plus 1/2 lb. chicken &ndash; 1 lb. beef plus 1 lb. turkey plus 1/2 lb. pork. Suit yourself!
Preheat oven to 350°F.
In large mixing bowl, combine ground meat, chopped onion, garlic, tarragon, parsley, bread crumbs, egg, chili sauce, cream. (If you're watching your calories, substitute light cream or even milk for the heavy cream.) Salt and pepper to taste. Mix well, shape, place in a 9x5 (large) loaf pan.
Cover the loaf with bacon slices. Cover with foil. Bake at 350° for 1 hour. (Throw some baked potatoes in now, if you like.) Remove foil, bake 15 min. more. Remove bacon, drain liquid. Blend 1/4 c. cooking liquid with sour cream, and serve with the meat loaf.
Delicious with mashed potatoes or baked potatoes.
