1 pork tenderloin, about 8 oz.
1 small clove garlic, crushed
1/2 Tbsp chopped dried sage
1 tsp olive oil
Directions:
Line baking tray with foil. Preheat oven to 400°. Remove as much fat as possible from pork. Mix garlic, sage. With a sharp knife, make deep incisions in pork and insert a little of the garlic-sage mixture in each one. Brush the meat with olive oil and place on the baking tray in oven. Roast for 25 min. or until a meat thermometer reaches 160°. Remove, cover with foil and let stand 10 min. Slice, serve.
