1/2 c. olive oil
2 Tbsp. Dijon mustard
3 Tbsp. lemon juice
2 Tbsp. minced shallots
1 clove minced garlic
1 Tbsp. basil
1/2 tsp. salt
1/4 tsp. pepper
This mild marinade is particularly suited to chicken or fish.
In a bowl, combine all marinade ingredients. Place marinade and your chosen meat in marinater (or a large ziplock bag) and let stand. (Marinading guidelines below.)
Marinate fish 10 min. at room temperature.
Marinate chicken for 30 min. at room temperature, or up to 2 hours in the refrigerator.
Marinate pork 30 min. at room temperature or up to overnight in the refrigerator.
