Provencale Beef Stew More Recipes Like This

Ingredients: Metric Units
2 lbs. beef stew meat
2 Tbsp. oil
1 1/2 Tbsp. flour
1 c. wine
1 c. water
salt, pepper
1 onion, chopped
4 Tbsp. olive oil

3 cloves garlic, minced
16 oz. tomatoes
pinch thyme
bay leaf
3 red peppers in strips
2 Tbsp. flour
1 c. red wine
1 pkg. frozen artichoke hearts
1/2 c. black olives
Brown meat in oil, sprinkle with flour, cook a few minutes. Add wine & water. Cover, simmer. Saute onion, garlic in 2 Tbsp. oil. Add tomatoes, season with thyme, bay. Simmer. In fry pan, heat 2 Tbsp. oil, saute pepper, sprinkle with flour, cook 2 min. Add wine slowly, stirring until thick. Add to tomatoes. Cover loosely, cook 1/2 hr. Add to meat, simmer until meat tender. Add artichokes, olives, cook 5 min.
