Lemon Barley Pilaf


Ingredients:
1 1/2 c water 1/2 c uncooked barley 1/2 tsp canola oil 1 c chopped onion 1/2 Tbsp fresh sage, chopped 1/2 Tbsp chopped fresh thyme grated zest from 1/2 lemon 1 Tbsp lemon juice 1 tsp margarine or butter salt, pepper to taste
Directions:
Grant Family Recipe Bring water to boil, stir in barley. Reduce heat, cover, simmer 10 minutes. Drain. Heat oil, saute onion until transparent and golden. Mix with barley and herbs. Add lemon zest, lemon juice, butter, salt, pepper. Mix thoroughly.
