1/4 lb spaghetti
1/3 c finely chopped sliced pepperoni
1/3 finely chopped red bell pepper
1/4 c freshly grated Parmesan
1/2 c thinly sliced callion greens
2 garlic cloves minced
1 lg egg, beaten lightly
1 tsp vegetable oil
sour cream, accompaniment
scallion green for garnish
Directions:
Cook spaghetti until al dente. In a bowl, toss together pepperoni, bell pepper, Parmesan, scallion, garlic, salt, pepper. Toss spaghetti w/mixture, add egg, toss well. In small non-stick skillet, heat 1/2 tsp oil over mod heat until hot but not smoking, add 1/2 spaghetti mixture, pressing evenly. Cook 3 min. (underside golden) Flip, cook 3 more min. Transfer to plate. Repeat procedure. Serve with sour cream, scallion greens.
