1 c. water
3/4 c. sun-dried tomatoes (not packed in oil)
2 plum tomatoes, quartered
1 sm. garlic clove
2 tsp. olive oil
1 Tbsp. balsamic vinegar
2 Tbsp. grated Parmesan cheese
1 Tbsp. pine nuts
1/4 lb. spaghetti
salt & pepper to taste
Directions:
Cook spaghetti. In a separate pot, heat water. Add sun-dried tomatoes, soak 5 minutes. Remove the tomatoes from water, reserving 2 Tbsp. of liquid (a scant 1/4 cup). Place reserved liquid, dried tomatoes, plum tomatoes, garlic, oil, vinegar in food processor. Blend until smooth. Remove to serving bowl, add cheese, pine nuts. Toss with cooked pasta. Serves two.
