Fresh Tomato Bisque


Ingredients:
3 lbs. fresh tomatoes 1/3 c butter 2 c dry bread cubes 1 1/2 tsp. salt 1/4 tsp. pepper 6 c water 3 cloves garlic 1 1/2 c heavy cream 2 egg yolks buttered croutons
Directions:
Cut up tomatoes. Heat butter in pot. Add tomatoes and cover. Simmer 5 min. Add bread cubes, salt, pepper. Mash unpeeled garlic with side of knife and add with water. Bring to boil, cover, simmer 1 hour. Sieve soup. Return to pot. Simmer another hour. Gradually beat cream into yolks. Add to pot, beating constantly, heat but DO NOT BOIL
