Onion Soup with Browned Garlic More Recipes Like This


Ingredients: Metric Units
1 tsp olive oil
1 c dry sherry
4 large yellow onions, thinly sliced
8 - 10 cloves garlic, minced
1 Tbsp flour
4 c fat-free stock
1/2 tsp. ground black pepper
salt to taste
6 slices French bread
3 Tbsp. grated Parmesan
Directions:
Heat oil and sherry in large dutch oven until boiling. Add onions, reduce heat to med., cook slowly, stirring frequently at least 20 min, until onions become pastelike. Add garlic & continue cooking 5-10 min., stirring frequently, until garlic begins to brown. Add flour. Stirr well, cook 2 min. Add stock, increase heat to high & bring to boil. Reduce heat, simmer 20 min. Add salt & peper. Float toasted French bread on top of serving, sprinkle with Parmesan.
