Peasant Potato Soup


Ingredients:
4 c diced potatoes 1 tsp. salt 3 med. onions, sliced 2 c water 3 c milk 1 c evap. milk/cream 1/4 tsp. white pepper 3 Tbsp. butter 1/4 c minced fresh parsley
Directions:
Combine potatoes, salt, onion, water. Cover. Bring to a boil. Lower heat, simmer 15 min. Puree in blender, or press through sieve. Heat milk in top of double boiler. Add mixture, butter, parsley. Mix well, reheat. Salt to taste.
