Rosti Potatoes


Ingredients:
6 medium potatoes, 2 lbs. 1 tsp. salt 1/4 tsp. pepper 3 Tbsp. oil 3 Tbsp. butter 1/3 c chopped onion
Directions:
Grant Family Recipe Cover potatoes with boiling water. Boil covered 15 minutes. Drain, chill overnight. Peel, coarsely shred. Sprinkle w/salt, pepper, toss. In a 10" skillet heat 1 1/2 Tbsp. of oil and 3 Tbsp. of butter. Cook onion until yellow. Remove onion. Place a layer of potatoes in the skillet, followed by a layer of onions followed by a layer of potatoes. Press down lightly Fry over moderate heat until bottom is browned and crisp. Place a large plate upside down over top of skillet, invert. Return to pan to fry soft side 8 - 10 minutes. Flip onto serving plate and cut into wedges.
