Ingredients: Metric Units
2 eggs, well beaten
1 c. milk
3 Tbsp vegetable oil
1 1/2 c. flour
3 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
Directions:
Mix eggs, milk, oil in large bowl or pitcher. Stir in flour, baking powder, sugar, salt. Mix until blended. Heat waffle iron, brush with melted butter/oil if necessary. Pour in batter. Close and bake until the steaming stops and waffles are crisp, tender, golden.

Makes 4-5 medium waffles.

This recipe makes a thicker batter than many waffle recipes, resulting in firmer waffles. Be careful not to overbeat the batter or waffles may be tough. (Alternatively, use 1/4 c more milk.)
