Beans with Sweet Red Peppers More Recipes Like This

Indian Side Recipes
Ingredients: Metric Units
2 Tbsp walnut oil
1 tsp garlic slivers
1 tsp cumin seeds
1 Tbsp ground coriander
1 tsp ground ginger
1 c loosely packed finely chopped cilantro
1 tsp salt or to taste
1 tsp mango powder
6 c (1 1/2 lb) mixed green and yellow string beans, cut diagonally in 1" pieces
1 c seeded, diced sweet red peppers
fresh ground black pepper to taste
1 Tbsp Crispy Fried Ginger
Directions:
Heat oil in large nonstick skillet over moderately high heat. Add garlic, cumin saute until they sizzle, 30 sec. Quickly stir in coriander, ginger, cilantro, salt. Add beans, red peppers. Cover and cook over high heat 2 min. Reduce heat to low, cook, stirring occasionally, until beans are tender-crisp, 10 min. Transfer to serving dish. Gently mix in mango powder. Season to taste with pepper. Garnish with Crispy Fried Ginger. Makes 8 servings.
