Mix flour, baking powder, salt. Put corn in food processor
and give it a few pulses.
Corn should be chopped fine, not mushy. Add egg, butter and milk to the corn and process to thoroughly combine.
Spoon wet ingredients into the dry ingredients and mix to form thick batter.
Heat oil in a large cast-iron frying pan to about 375°F.
Drop spoonfuls of batter into oil and cook until golden brown, turning once. Remove from oil and drain on paper towels.
