Ensalada de Aguacate (Avocado Salad) More Recipes Like This

Mexican Side Recipes
Ingredients: Metric Units
1 garlic clove, minced
1 lg avocado, ripe, firm
1–2 tsp fresh lime juice
2 fresh tomatoes
4 radishes
1 sm red onion, chopped
lettuce
salt, pepper
sliced black olives
Jalapeño-Piñon Dressing
Directions:
Rub bowl thoroughly with garlic, discard.

Dice avocado, place in bowl, toss w/ lime juice.

Cut tomatoes in cubes, drain.

Chop radishes, onion, combine with other ingredients. Chill.

When ready to serve toss with Jalapeño-Piñon Dressing. Place salad on lettuce beds. Garnish with black olives.
