Stuffed Avocadoes More Recipes Like This


Ingredients: Metric Units
2 tsp plus 1 Tbsp lemon juice
1/2 tsp salt
1/8 tsp black pepper
2 Tbsp olive oil
1 c cooked rice
1 ripe tomato, seeded, diced
4 scallions, sliced
1 clove garlic, chopped
1 Tbsp chopped fresh cilantro
2 ripe avocados
Directions:
In small bowl, combine the 2 tsp lemon juice, salt, and pepper. Slowly whisk in olive oil, set aside. In anotehr bowl, combine rice, tomato, scallions, garlic and cilantro. Add lemon juice dressing and mix evenly. Slice avocadoes lenghtwise into 4 halves, remove pits. Sprinkle remaining lemon juice over avocadoes. Sppon rice mixture into each avocado half.
