1 c. flour
3 Tbsp. sugar
1/2 Tbsp. baking powder
1/2 tsp. salt
1 c. milk
3 Tbsp. vegetable oil
2 eggs
Directions:
Sift together flour, sugar, baking powder, and salt. In another bowl, beat eggs. Add milk and oil to eggs and whisk together. Add dry ingredients to wet and beat just enough to wet the flour. (Beating too much makes a tough pancake.)
Cook on hot griddle or skillet (about 425°). When bubbles in middle pop but don't collapse, flip and cook about a minute more.
Makes about 12 medium-sized pancakes, medium-height pancakes.
