Steak Tartare (as served to me in Milan!)

Italian Dinner Recipes

1 really fresh, really clean 6 to 8 ounce steak, all fat trimmed off 1 really fresh, really clean egg (I'd suggest dipping the whole egg in a water/bleach solution before you begin) Really clean countertop area for working Really clean knives/mezzaluna/cleaver A really clean Tablespoon A strong stomach Fresh-ground black pepper to taste

NOTE: FOOD REMAINS RAW. PREPARE AND EAT THIS AT YOUR OWN RISK. THERE IS RISK OF FOOD POISONING IF YOUR INGREDIENTS AND/OR WORKSPACE ARE NOT CLEAN. Side note: While in Milan I foolishly ordered this, thinking it was a cooked steak. I ate only three bites. It tasted good enough, but I don't trust restaurant cleanliness in general) Directions: Chop up the uncooked steak into little itty bitty pieces, almost to the point of it being hamburger. Using a really clean utensil, transfer the steak to a serving dish. Using spoon, make a well in the middle of the steak. Crack the egg into the well. Add pepper. Serve IMMEDIATELY. Do not add any other food (salad, side dish) to the plate. Throw out any leftovers. "Enjoy." Yeah. Right. -Diana
