1 c. flour
3/4 c. corn meal
1/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. vegetable oil
1 egg, well beaten
Directions:
Heat oven to 425 degrees F.
Grease an 8 x 8 baking pan.
Mix corn meal, flour, sugar, baking powder, salt. Add milk, egg, oil. Blend well. Spoon into pan. Bake 20 min., or until it pulls away from the sides of the pan slightly, or until toothpick comes out clean.
Great as a side with chili. Makes a sweet, moist, cakelike cornbread. Store the leftovers in the refrigerator.
